Dinner day 1
1st COURSE |Zucchinis, ricotta, almonds, buckwheat, mint, lentil pate
2nd COURSE |Mushroom ragout, soft-boiled egg, dukkah
3rd COURSE | Crispy polenta, bell bell pepper emulsion, seaweed chutney, roasted onions, broccoli
4th COURSE | Red berries, coconut soup, turmeric oil, pistachios
Lunch day 2
Cous cous cous, red onion, dried fruits, raisins, figs. Fresh herbs (in case of a non TACC person, cauliflower cous cous can be substituted).
Spreadables: sundried tomato paste, babaganoush, chickpea hummus, lentil paste.
Breads based on corn flour, cassava and rice flour
Seasonal vegetable curry, coconut milk, basmati rice, creamy chestnut soup
Sweets: roasted fruits, coffee cream, blueberry chutney, almond praline
Dinner day 2
1st COURSE | Vegetable ceviche, fried corn, cilantro
2nd COURSE | Rice noodles, ponzu sauce, onion, Brussels sprouts
3rd COURSE | Fainá, smoked eggplant, sautéed mushrooms, broccoli purée
4th COURSE | Chocolate and avocado cream, carob earth, citrus fruits
Lunch day 3
1st COURSE | Pategras chipa, creamy bean soup, spicy honey
2nd COURSE | Candied carrots, sunflower puree, sweet potato crisp, orange
3rd COURSE | Braised cabbage, mashed cabbage, grape pickles, buckwheat
4th COURSE | Banoffee, chestnuts
